Spinach and Garlic soup

I sauté onions first and some garlic ( I like the taste of sauted garlic then I add water and potatoes until soft .Smash the potatoes then puree the spinach and fresh garlic( to the puree) cloves 1-4 with Almond milk or water or some of the broth from the onions maybe a ½ cup and that’s it . One of my favorites

Kale and Potatoes Soup

I sauté onions first and some garlic then I add water and potatoes until soft . I like to leave some chunks then add fresh Kale and thyme after cooking

Green beans Onions and Almonds

Cut the green beans and onion’s up into desired pieces ,steam add fresh finely chopped garlic or fresh garlic oil after steaming then sprinkle almond on top (cut garlic up and put into jar with extra virgin olive oil let it sit 2wks. can be used within an hour )

Kale Salad and Baked Potato

Fresh kale cleaned and whatever you have on hand . I like to sprinkle sunflowers seeds and chia seeds on my Kale and whatever fruit I have sometimes just the seeds with garlic oil or just plain olive oil and Acv(apple cider vinegar). Then I will eat a baked potato with it with garlic oil and rosemary or thyme

Roasted Garlic Rosemary Potatoes & Mixed Vegetables

Cut potatoes’ into bite size pieces bake 30-45min- towards the end add garlic cloves with wrapping still on it remove and add rosemary remove wrapping from garlic cloves .Steam mixed vegetables of your choice. Sometimes I will add lots of onions and some red & orange peppers

No Cheese Nachos

Organic tortilla chips Fresh made guacamole 2 ripe avocados 1/2 red onion, minced (about 1/2 cup) 1-2 serrano chiles, stems and seeds removed, minced2 tablespoons cilantro (leaves and tender stems), finely chopped 1 tablespoon of fresh lime or lemon juice1/2 ripe tomato, seeds and pulp removed, chop & mix .Refried beans homemade (pinto beans soak, cook till soft smash add cilantro onions garlic Shredded Chicken cooked in green chili .Top chips with ingredients

Snacks

Celery sticks -spread natural peanut butter in celery stick drizzle with raw unfiltered honey

Apple & raisins cut apple in half ,remove core, put the raisins in the middle bake @350 with a little water in the pan about an hour until tender drizzle with honey and cinnamon when done (opt. walnuts almonds etc…).

Kale chips-rinse cut into bite size pieces heat @350 about 10-15mins with a little olive oil sprinkle with a pinch of sea salt and or fresh ground pepper maybe even a little sprinkle of cayenne at the end .
