Desserts and Snacks

Although this is a place we do not want to indulge ,we can reward ourselves

with special treats and not feel guilty about it.Snacks will help give us that extra energy we need in between meals.

We can also use the breakfast smoothies for a snack or a desert.Eating fresh fruit is the best snack or dessert we can have.We may also est almonds (favorite nut or seed) or dried fruit .A trail mix is excellent without all the preservatives.Don't forget dark chocolate .

Berries Salad

2 cups of strawberries sliced,1 cup of blueberries,1 cup raspberries

1/2 cup grated raw coconut(Opt.) garnish with 1 cup chopped pecans (favorite nut or seed)


Strawberry and Banana Icecream

freeze 1 cup of strawberries and a few bananas

chop and put in blender add 2tsp. cinnamon or nutmeg

1/2 cup walnuts or favorite nut ,organic vanilla

add 1/2 -1 cup of water depending on desired consistency

For an ice cream sandwich spread onto rice cakes wrap in plastic for later if you can wait .


Pumpkin Pie

9 inch. shell 2 cups cooked mashed pumpkin or squash

1/4-1/3 cup of honey 1 cup light soy cream,1tsp. of each pumpkin pie spice,cinnamon and ginger. Blend ingredients until very smooth and creamy pour into pie crust bake 55min. -1 hour at 4oo degrees or until knife comes out clean when inserted.


Pie Crust

21/2 cups ground sesame seeds 2 tbsp. sesame oil

1 tsp. raw maple syrup 1 tbsp. warm water 1 tsp. organic vanilla extract

mix and press into oiled pie pan.

filling:

2 chopped pears 2 chopped apples 1/2-1 tsp. cinnamon

2tbsp. maple syrup and 1/4 cup raisins

marinate overnight ,spoon ingredients into pie crust cover

with sliced bananas and strawberries top with 2tbsp. wheat germ (opt.)

or

1 1/2 cups of the following strawberries,blueberries and raspberries

mix 1/4 cup of each berry with 1/4 cup of water and 2 tbsp. maple syrup

Blend and pour over remaining berries in the pie crust.

cover with walnuts and coconuts (opt.)

Strawberry Pudding

2 cups strawberries 2 cups low heated barley 1/2 cup of honey & 1/2tsp. almond extract. combine in blender ,puree and set aside.

2 cups strawberries 1/2 cup honey 2 tbsp. arrowroot 1/2 tsp. almond extract

combine these ingredients in the top of a double boiler (put water in the bottom of a pot and place a bowl inside of that and put the ingredients in the bowl)

heat to 130 for about 30 min. remove add mixture from blender

chill thoroughly and serve

garnish with strawberries halves and coconut(opt.)

you may use other fruits and grains as desired.

Fruit Cobbler

lighlty steam fresh fruit,sweeten as desired with honey or molasses

top with ground ,low heated grains(oatmeal),lightly toasted and ground seeds or nuts

top with nut cream.

Fruit Pita

heat 2 apples , 1/4 cup raisins(opt.) and water or apple juice over low heat about 5 mins. stirring frequently,remove & mix in flaxseed ans cinnamon.

cut pita in half(whole grain)fill with fruit toast in the toaster oven around 3mins.

try it with your fruit fruit like peaches.

Apple Pear Salad

3 yellow pears 3 apples(remove skin if waxed)

handful of walnuts or desired nut 1 tsp. cinnamon 4 tbsp. wheat germ

I also enjoy having a peanut butter and honey sandwich for something sweet on whole grain bread and all natural peanut butter.You make also like soy ice cream (rice,or coconut).Banana split 3 scoops of alternative natural ice cream 1 banana cut in half top with honey and peanut butter or your favorite fresh (frozen with no added sugars or preservatives) fruit.
